, specifically walnuts, are a great source of healthy fats, linoleic acid, linoleic acid, but also quality protein, vitamin B1, B2, B3 and B6. These vitamins are necessary for the function of the heart and for the balance of our nervous system. We use nuts in many ways – we use them to bake cookies, in porridges, just for flavour, to add healthy fats to our diet, drink nut milks… What to do with nuts if you know you\’re going to have too many in the spring? Prepare a great homemade nut milk!

If you have somewhere to get unripe nuts and you have some time to prepare this delicious liquid, be sure to get started. Even our grandmothers knew that walnut liquor stimulates our organism and can keep a person healthy. The preparations are of course different, they differ in the basics such as the amount of spices, the alcohol in which the nuts will be infused but also the length of infusion.
The preparation is not complicated. First you pick the unripe nuts at the given time. Preferably by hand – fallen fruit will be bruised and of poor quality. Cut the nuts either into quarters or eighths, or even into half-centimetre slices. The smaller the pieces, the more flavour you get from them. Prepare a larger jar and put the nuts in it. Add whole cinnamon, cloves, juniper and the grated zest of half a lemon. You can also add a pinch of nutmeg. However, this is very aromatic and many people find it off-putting in taste.

It\’s up to you whether you use plain vodka or aromatic rum. Choose better quality alcohol so that it doesn\’t spoil the taste of the final drink. Pour the alcohol over the nuts and leave to infuse for a month or two. After the infusion, add the cooled sugar liquor – a kilo of sugar dissolved in half a litre of water. You can use the same spices in the liquor as you did at the beginning of the preparation. Finally, filter the liqueur through a strong cloth and pour it into clean and boiled glasses with screw caps. You can taste the liqueur after a week, but it is ideal to let it sit for at least 2 months. This is around Christmas time, so you will actually have it as a Christmas present.
